Casa Brera, a Luxury Collection Hotel, Milan is currently recruiting a Sous Chef. Reporting to the Head Chef, the role will be responsible for coordinating the culinary team and the daily operations. This is full-time position, 5 days a week with 2 days off.  The starting date is September. We inspire you to grow and challenge yourself because when you are pursuing excellence, you're helping us to provide exceptional travel experiences.   What you'll do  - Coordinate the culinary team and support the Head Chef in all culinary operations.  - Support all the parties and coordinate the brigade during service.  - Process orders in company systems, maintain relationship with the purchasing department and approved suppliers.  - Review production sheet to understand variety of goods to be produced daily.   - Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.   - Maintain kitchen logs for food safety program compliance.   - Keep Chef informed of excess food items for planning of daily specials.   - Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.   - Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.   - Monitor the quality of food prepared and portions served throughout the shift.   - Assist management in training, scheduling, evaluating and motivating employees; serve as a role model.   - Ensure compliance with safety training and certifications.  - Follow Standard Operating Procedures and brand identity guidelines.  - Comply with quality assurance expectations and standards.  - Comply with all health, safety and hygiene standards and policies.  What you'll need:  - Passion for the luxury lifestyle hospitality and the culinary industry.  - A warm, people-oriented demeanor and a team-player attitude.  - A safety-first approach.  - Positive outlook and dependability.  - Previous experience in similar roles is an advantage.  What we offer:  - A unique opportunity to be part of a luxury lifestyle hotel where we celebrate your unique talent.  - Part of Marriott International, the largest hospitality brand in the world- this means national and internal promotion opportunities for the right candidates.
